3 lb Watermelon, Cubed
1/4 Cup Olive Oil
3 Tbsp. Lemon Juice
Zest of 1 Lemon
Salt & Pepper To Taste
1/4 Cup Fresh Mint, Roughly Chopped
4 oz Feta Crumbles
Dress the cubed watermelon with olive oil, lemon juice, zest, salt and pepper. Lightly fold in the mint and top with feta.
