Roast NY Strip with White Wine Cream Sauce

1. Preheat oven to 300°F.
2. Combine olive oil and Karns Butcher Love seasoning to make a paste, coat NY strip roast.
3. Next, place the roast in a hot frying pan and sear quickly on each side. Place in roasting pan and cook until desired doneness is reached. (Approximately 12 minutes per lb. for medium rare.)
4. Add white wine to a sauce pan. Simmer until reduced by 1/2 - approximately 5 minutes. Add butter, rosemary and garlic. Once butter has melted, add cream and mustard and bring the sauce to boil. Reduce heat to low and allow sauce to thicken - approximately 5 minutes. Slowly add parmesan cheese. Season with salt and pepper to taste.
