Breakfast Quesadillas

Karns Cookin' For The Weekend
1. Whisk eggs and chiles and a small pinch of salt in a medium bowl.
2. Melt 1 tbsp. butter in a large skillet over medium heat. Add eggs and cook gently, only pushing eggs as needed to keep fluffy.
3. Add olive oil to the skillet, place 1 tortilla in the skillet. Immediately top 1/2 of the tortilla with cheese, 1/4 of the egg mixture, add another sprinkle of cheese and fold tortilla.
4. Brown on both sides. Repeat. Serve with desired toppings.
